these cookies were born of a craving for almond butter and cookies, and they are a hit!
here's the recipe I patchworked together
almond butter, oatmeal, chocolate chip cookies
1 C unbleached AP flour
1 tsp baking soda
1/2 tsp sea salt
1/2 C organic butter
1/2 C almond butter
1/3 C organic cane sugar (actually a little under since a full measuring cup of sugar makes me cringe...lol)
1/3 C organic brown sugar
1 tsp vanilla extract
1 tsp hazelnut extract (optional)
1 egg
1/2 C rolled oats
1 C bittersweet or semisweet chocolate chips
Preheat to 350 and line baking sheets with parchment
Cream the butters and sugars together in mixer until fluffy
Whisk dry ingredients together in a separate bowl while mixer is creaming
Add egg, vanilla, and any other extract you like into butter and sugar
On low speed, add the flour mixture until just combined. Add oats, and then stir chocolate in by hand.
Drop nice big blobs of dough onto your parchment (3 T or so) leaving about 1-2 inches between them and bake for 10-12 min
Leave on the baking sheets until they have cooled some and solidified enough to remove from the sheets without falling apart. Or get impatient and let them fall apart so you can "salvage" the broken bits by eating them. Then move them to a cookie rack to finish cooling.
